Bespoken Spirits is not the first startup to tackle aging acceleration processes, but the company claims to be the first to use machine learning approaches. The new technology is called ACTivation. The first three letters are the abbreviation “aroma, color, taste”. The traditional aging of whiskey in barrels is a waste, the company believes. About 20% of the product is lost during this process due to evaporation. In addition, aging takes a long time, which creates financial problems for newcomers to the business and makes it difficult to innovate.

The new technology is still causing great skepticism among whiskey producers, Techcrunch notes, but this did not prevent Bespoken Spirits from winning prizes in several professional competitions.
